5 Watermelon Recipes For Summertime

Nothing is more summertime then a ripe and juicy watermelon, which can be seen around every barbecue and outdoor event this summer. But if you are looking for some new takes on this simply delicious classic, check out our favorite recipes that are guaranteed to make you the best hostess in town.




Watermelon Salad with Mint and Prosciutto:

Ingredients:
4 ounces thinly sliced prosciutto
3 pounds watermelon (including rind)
6 radishes (cut into quarters)
4 scallions, sliced
1/4 cup fresh mint
1/4 cup salted peanutes (chopped)
2 tablespoons fresh lime juice
1 tables spoon extra-virgin olive oil
Salt and Pepper




Preperation:
Heat Oven to 400 degrees F. Arrange the prosciutto in a single layer on the baking sheet and bake until crisp, around 8-10 minutes.

Trim and discard the watermelon rind. Cut into 1/4 inch-thick triangles. Place the watermelon into serving dishes and sprinkle with the radishes, scallions, mint and peanuts. Drizzle the lime juice and oil on top, then season with salt and pepper.

Break the prosciutto into pieces, sprinkle over salad and serve!


Watermelon-Lime Cooler:

Ingredients:
6 cups seedless watermelon chunks
4 tablespoons frozen limeade concentrate
2 tablespoons fresh lime juice
1 1/2 cups crushed ice
Lime slices for garnish
Vodka (optional)

Preperation:
Combine all the ingredients in a blender and pure until smooth. Transfer to a fitch filled with ice and serve in glasses, garnish with lime slices. Add vodka to taste if desired, or serve them the way they are to the kids.




Watermelon Sorbet:
Ingredients:
3 cups water
1 cup sugar
4 cups seeded and chopped watermelon
1/4 cup lime juice




Preperation:
Bring 3 cups of water and sugar to a boil in a saucepan over high heat, stirring until the sugar dissolves. Remove from heat and cool.

Process sugar syrup and watermelon in a blender until smooth. Stir in lime juice. Cover and chill 2 hours.

Pour mixture into 1 gallon ice cream maker and freeze according to manufacturer instructions. 




Watermelon Salsa:

Ingredients:
1 cup diced unpeeled nectarine
2 jalapeƱo peppers, seeded and minced
1 tablespoon sugar
3 tablespoons fresh lime juice
2 teaspoons orange zest
2 teaspoons grated fresh ginger
2 cups seeded and diced watermelon
1/2 cup chopped fresh cilantro
1/3 cup diced red onion

Preparation: Stir together first 6 ingredients in a large bowl; let stand for 15 minutes. Add watermelon, cilantro and onion and gently toss. Serve immediately or cover and chill.

Three Melon Mozzarella Salad:



Ingredients:
3 cups cubed cantaloupe
3 cups cubed watermelon
3 cups cubed honeydew
2 tables spoons chopped fresh basil
2 tablespoons honey
8 ounces of fresh mozzarella (chopped into pieces)
1/2 teaspoon of salt

Preparation: Place melon cubes in large bowl. Add basil. Then drizzle honey over the melon, add the mozzarella and salt. Toss salad and serve.
